Pisco Clasification (Types)
The Following Types of Pisco are Recognized:
Pure Pisco: obtained from only one of the eight recognized varieties of Pisco grapes (single-variety-Pisco). Mosto Verde Pisco (Green Must Pisco): This Pisco is produced when the fermentation process is interrupted in order to distill the must, which still has traces of sweetness. (This must is "green". If the fermentation process had been allowed to conclude, the distilled product would have been made of "mature" must.) This process instills the body, aroma and flavor of this special kind pf Pisco with more complexity. Unlike Pure Pisco and Blended Pisco, Green Must Pisco requieres more than twice as many kilograms of grapes to produce one liter of Pisco.
Acholado Pisco: This Pisco is obtained from the mix of Pisco grapes, must from Pisco grapes, completely fermented wines (fresh wines) made from Pisco grapes, or Piscos made from Pisco grapes. Enjoy pisco responsibly.
