"In wine or pisco one is always an apprentice."
I had the pleasure of tasting this red Vermouth Perlino, originating from the Piedmont region in northwest Italy. I love vermouth; I enjoy it in several ways: on the rocks with a slice of lemon and a wedge of orange; occasionally, I moisten the rim of the glass and coat it with white sugar. I also drink it neat or with the same on-the-rocks recipe, adding sparkling water. It’s very refreshing, light, and works perfectly as an aperitif or digestif.
Production Process: Initially, aromatic plants like wormwood, along with spices and caramel, are macerated in a distilled spirit for 30 days. Later, this mixture is typically blended with white wine.
It is said that Antonio Benedetto Carpano, from Turin, the capital of Piedmont, was the first to market this fortified wine under the name vermouth in the late 18th century.
