What is a fortified or "encabezado" wine? The technique used to fortify wine is called "encabezado," which involves adding alcohol during or before the fermentation process. The result is a wine with a higher alcohol content (15° to 22% ABV), a richer texture, and more robust flavors. These wines are sweeter due to the sugars that did not fully ferment, and they have greater stability. Once opened, a bottle of fortified wine can last for several months.

Nose: Clean aromas, sweet, honey, caramel, light citrus notes, lime, raisins, herbal, cinnamon spices.

Palate: Sweet entry, silky, unctuous, pleasant alcohol presence, well-balanced. Notes of honey, cinnamon, herbal hints, citrus, lime. Medium-long persistence, sweet finish.

Comment: A well-crafted and clean generous wine on the nose. It presents aromas of honey, raisins, and figs. On the palate, it offers very pleasant and balanced sensations that invite you to keep drinking. Highlights include notes of chancaca honey, light citrus touches of lime, and a perfect harmony between sweet and acidic flavors. Its persistence is excellent. Recommended to pair with desserts or a cheese board. Ideal serving temperature: 7°C.
