The appointments of tasters (expert or newer), that's, the titles that differentiate expert tasters from those with less experience, are a pending issue to be resolved. I spoke with some colleagues and we agreed that it deserves a more detailed study. Article 36 of the 2018 National Pisco Contest regulations included the title "On Tasting and Tasters". There, the invitation to tasters to participate in the contest was specified, as well as the requirements that newers & expert tasters had to meet. Among them were: 1) Being registered as tasters in the National Pisco Commission registry, "Conapisco", 2) Showing outstanding personal and professional qualities, 3) Having passed a training course authorized by the Pisco Appelation of Origin Regulatory Council, "CRDO Pisco" and, finally, 4) Having participated in 3 national or regional contests.

It would also be necessary to add how the quotas for new tasters are established. Initially, the contests were held by Conapisco until 2011 when the CRDO-Pisco took over and organized them until 2015. During this stage, expert and newer tasters were registered and those who corresponded were also appointed. However, as of 2016, Conapisco resumed this function. Today, it has invited the three taster associations to participate in the board. It's undoubtedly something that commits us to work together, since tasters are important pieces in the production chain of pisco. We represent the final consumers and offer producers our trade with the best intention. That's why we must support in the registration of tasters, training, practice and continuous evaluation. In addition, it's also our duty to prepare a code of ethics that's included in a taster's regulation. One that is approved by the three associations.

Let us not forget that we have a standard for the training of expert tasters since August 21, 2014, with number NTP-ISO 8586:2014 SENSORY ANALYSIS. We have the tools! Another important issue is the contests that take place throughout the year in the pisco producing regions. In them, newer tasters can practice with the help and participation of expert tasters to familiarize themselves with the tasting sheet and the regulations of the International Organization of Vine and Wine "OIV" competitions.

On the other hand, the help that small producers receive from these contests is fundamental. For this reason, it's important to have the list of all those district and/or regional events that are held annually to inform & invite members to participate. An idea to consider could be the appointment of tasters to attend the most important international contests. In this way, the tasting of pisco is taught, as well as its dissemination. Over the last few years, 25 national contests have been held with very positive results for the pisco industry.

Since 2009, we have had the sponsorship of the "OIV", and we use the current standard of international contests. This positions us in an important place in the world of wine & spirits. Tasters, there's a lot of work to be done, let's keep moving forward. Enjoy pisco responsibly.
