Dreaming of Pisco: A Journey Guided by the Denomination of Origin

Juan is interested in entering the pisco-making business, so he decides to seek information from the Regulatory Council of the Pisco Denomination of Origin (CRDO-PISCO), the only authorized organization created by producers from the five regions holding the Pisco Denomination of Origin.


This entirely private organization is governed by a seven-member board. Five members are elected by pisco producers in each of the five regions; one is an independent taster appointed by the associations of pisco tasters; and one is a government official representing the holder of the Pisco Denomination of Origin.

All seven members vote to elect the president of the CRDO-PISCO for a two-year term, with the possibility of one additional two-year term.

The Council also has a professional manager who, according to its bylaws, must have no connection whatsoever with the pisco industry. In other words, this person cannot be a producer, a producer’s relative, or a distributor, and cannot work —or have previously worked— for any winery or pisco producer. In fact, if he doesn’t even like pisco, all the better.

His responsibility is to organize the Council’s operations and secure the funds necessary for its proper functioning.

Juan is not a grape grower, so he needs to purchase his raw material. To help him, CRDO-PISCO provides him with information on several registered producers of pisco grapes from whom he can purchase his grapes with confidence and traceability.

The Council also offers training courses in viticulture, pisco production and tasting, taught at its own facilities, to help him acquire the necessary knowledge.

This is particularly important to Juan because his project goes beyond simply making pisco. He also wants to enter the business of growing pisco grapes, thereby completing the entire cycle: raw material, production and market.

Another excellent service provided by CRDO-PISCO.

But then comes the next question:

Which market should he target? How should he approach it? Where should he begin?

Of course, Juan understands that achieving his goal requires him to meet certain requirements established by CRDO-PISCO, as well as obtaining the corresponding Pisco Denomination of Origin authorization for every pisco that is sold domestically or shipped abroad.

He must also produce the pisco in accordance with the current Regulations of the Pisco Denomination of Origin, and the label must include information such as the origin of the pisco grapes, the current Denomination of Origin authorization number, the harvest year or vintage, production lots, the origin of the distillate, and other required information.

Throughout the process, CRDO-PISCO supervisors will accompany him, providing the information and guidance he needs at the appropriate time.

Making pisco requires knowledge.

There is no room for improvisation.

It is a craft that demands both time and financial investment.

When Juan first arrived at the Regulatory Council, all he had was the capital and the idea of making pisco. He did not know how he would produce it, nor whom he would sell it to.

His enthusiasm, combined with the support and guidance provided by CRDO-PISCO, allowed him to establish his company and ultimately achieve success.

Isn’t that wonderful?
